I've always wanted to try making some lemon cookies. I've seen them on the internet for quite sometime but never really got in making them. This yummy snack has a subtle taste that can be paired perfectly with Coffee or tea! It also makes a great snack!
Visit the original recipe that I followed here . Like always, I altered the recipe to my likings and to the availability of products.
- Cream the butter at room temperature and add in the sugar.
- Add in egg and vanilla.
- Gradually add the dry ingredients and mix it using a spatula.
- Add Fresh lemon juice and zest of one lemon.
- Cover the mixture tightly and let it sit in the refrigerator for at least 30 minutes.
- Preheat the oven at 350℉.
- Once the cookie batter is chilled for 30 minutes, take it out of the fridge and scoop the dough using a spoon or an ice cream scooper. Another option is you can form the dough into balls before putting it in the baking tray lined with butter or wax paper.
- Bake the cookies for 10-12 minutes. Let it cool and enjoy!
